Higgsy’s – Home of the Redneck Burger!

It’s been a long time coming but I have finally made it!

Recently voted the most popular burger joint in Cambridgeshire by Cambridgeshire Live readers, Higgsy’s is getting quite a name for itself, especially considering that they have only been open a year.

Located in a layby between Yaxley and the A1(M), you’d be forgiven for thinking that Higgsy’s is just another trucker’s food van. On further investigation however, you notice that their menu is so much more than that. Higgsy’s offers a selection of exciting ‘redneck’ style smash burgers not found anywhere else in the county.

If you are wondering what a redneck burger is exactly, then to put it simply, they are a burger traditionally made from ground beef (mince), bacon and hot dogs. Or if you are looking for a chicken version they offer fried chicken burgers.

As it was my first time, I decided to go for their signature burger – The Redneck. This is a double smash burger made with chuck steak from a Royston butcher (instead of mince), onions, 4 beef Frankfurter sausages, 4 layers of cheese, and double streaky bacon.

They have a rather simple but effective website, which is where I noticed that they also do a triple and a quadruple burgers too 😱. I went for the triple because I have given up on any form of moderation in my life but also to really get into the spirit of things.

The food is made fresh to order, so I recommend ordering on their website prior to visiting to avoid having to wait in the layby. If you don’t get the chance to do this then it’s still ok, as the team here are really chatty and friendly, so the time flies by.

The triple hillbilly looks really tidy and well presented on arrival and is just as beautiful on the inside as it is on the outside, with everything loaded up and stacked in an organised fashion.

The burger is absolutely incredible on the bite. It is so juicy and flavorful with so much going on at once. The Frankfurter sausages are an absolutely stupendous addition to the burger that adds a bold salty flavour with a slight smokiness, which really compliments the crispy bacon. The generous use of mustard gives it a real spicy kick, which is right up my street (but might be a little too much for others). The four layers of cheese bring it all together nicely by adding a light cheesy flavour with a slightly creamy texture. The onions are caramelised, which adds a nice sweetness at the tail end of the pallet. Marvellous!

The burger is a messy eat. There is just too much going on in the burger for bun to handle. This is not always a problem in a restaurant but watch out as I know most people will be eating this in their car. It didn’t ruin the burger but it did start to lose its structural integrity towards the end. This may be due to ordering the triple but I think the double would just about hold comfortably. It does beg the question of what would happen if I had offered the quadruple? 🫣

Somehow, the ‘Higgsy Special’ may have ended up on my order too (I know, it’s a mystery 🤷‍♂️). This is a Higgsy take on loaded chips which comes with chips, nacho cheese, chicken breast, smash burger meat, and one of their beef Frankfurters.

This was a box of pure unapologetic indulgence. It consists of the contents of my burger but with nacho cheese AND chicken on top. If you are looking for a healthy balanced meal then get the hell out of here! 🤣

Mine was caked in garlic mayo but you are also given the option on their website to pick from a list of other sauces. The nacho cheese was the real star of the show, adding an exciting cheesy tang to the flavour and was absolutely perfect at making sure nothing was too dry. The best thing about it is that you do not find it until you get through the first layer of meat to discover an assortment of chips swimming in a sea of cheese below. 🤤

After eating a triple burger I found myself struggling to finish the Higgsy Special, yet by the time I had driven home I had noticed that I was unable to leave the box alone and it had all gone! 🤣 It’s just the sort of thing you cannot leave alone.

Watch out for the sign!

I love Higgsy’s and their unique take on burgers. There is truly nothing else like it in the county. They aren’t trying to be gourmet but are completely focused on flavour. Everything is beautifully presented and portions are generous (especially if you go for the quadruple burger! 🫣).

It would be reassuring to see them invest in a superior bun to hold everything together for the larger burgers. Gorilla & Lamb use Martin’s bread rolls that would serve this purpose perfectly. Otherwise, it was a truly great experience and I cannot wait to visit them again. I have already set my sights on their Rooster fried chicken burger for next time!

I would love to see this as a food van or in more locations as I think Higgsy’s would go down well wherever they go. In fact, rumour has it that there might even be one in the works already! 😉 Watch this space!
