Higgsy’s Burgers opens a brand new restaurant in Peterborough

Everyone’s favourite burger is back!

If you’ve been following my burger league table, you’ll already know that I think Higgsy’s has been doing some of the best burgers in Cambridgeshire.

After their old shack located on the Yaxley layby was shut down by the council due to…well, the council not actually maintaining the layby properly, they have finally decided to take the plunge and open a proper restaurant.

Located just off the main square in Peterborough, Higgsy’s transition into an established restaurant felt completely inevitable, as their popularity has gone from strength to strength. I remember being the first content creator to visit them back in 2023, and watching their well-deserved success grow over the years has been such a joy, especially after the ridiculous challenges they’ve faced, including three separate arson attacks. I was absolutely dying to visit to see the finished article, as a permanent restaurant is the ultimate way for them to express who they truly are and show off their final vision.

Higgsy’s through and through

The restaurant is still brand new, so the outside signage is missing for now, but their classic Higgsy’s logo is going to look banging once it is up. Despite that, the restaurant inside feels well established with a very distinctive Higgsy’s personality inside. The large mirrors make it look spacious, with enough seating for 50-60 people with no problem. It is casual, fun, and practical, with an open-plan kitchen located at the back for that reassuring transparency, so you can see the kitchen in operation.

A massive highlight for me was the outside seating area, which is absolutely perfect for basking in the sun with a pint. Both Neck Oil and Cruzcampo are available on draught. Now, this won’t excite the craft beer snobs or the real ale puritans, but it is a decent choice for the common man and served me perfectly while sitting in the sun scoffing burgers. What really struck me, though, was the sheer friendliness of the Peterborough crowd, with so many people stopping to say hello and comment on my food as they walked past. This is the kind of warm, community vibe you don’t always associate with a city. Holiday vibes!

All the classics are still there

The line-up looks the same as before, with their classic Redneck burger and the Dixie variations still taking centre stage, offering unapologetically trashy American-style burgers. I say trashy, but the ingredients were still quality, with the burgers being made from British chuck steak, Grasmere Farm dry-cure streaky bacon, and imported German beef Frankfurter sausages, with two slices of British cheese and two slices of mozzarella. This is the real deal!

Loaded skin-on fries were also available, slathered in nacho cheese and a choice of topping. This included a breakfast version of the loaded fries, which was essentially a deconstructed Higgsy’s burger with chips instead of a bun, including a frankfurter sausage and dry-cured bacon. I had never had loaded fries for breakfast, especially ones designed for breakfast, so I decided to get into the spirit of it and give them a go.

The Legendary Red Neck Burger

I decided to go for the classic Redneck burger, a Double Dixie, and a portion of their loaded breakfast fries.

The Redneck burger is Higgsy’s signature choice and by far their most popular. They used to source their beef from a local butcher but have since changed their supplier to Bookers. While that name might not excite some foodies, many restaurant owners will know that they actually have a quality butchery department.

When the food arrived, I loved how neat and tidy the burgers were. They hand you a napkin and a wet wipe, but unlike many other top burger joints in the county, there was very little mess. The bacon was thick and juicy, the cheese was beautifully melted, and the burger bun was strong enough to hold everything together without any worry – something that often faults other inferior burger joints.

On the bite, the Redneck burger is absolutely incredible. It is so juicy and flavourful, with the imported German smoky beef frankfurter adding a bold, salty kick that really complements the double Grasmere Farm dry-cure streaky bacon. I even noticed a very mild spiciness, while the four slices of cheese (especially the real mozzarella) make the whole thing extra gooey and creamy. Marvellous!

The Double Dixie

The Double Dixie

If the Redneck burger feels a bit too intense, the Bacon Double Dixie is the perfect alternative. It is essentially the same glorious setup, just without the hotdog.

You still get those two incredible British chuck steak patties, the double Grasmere Farm dry-cure streaky bacon, fresh onions, and that same gorgeous, gooey four-cheese blend. It is a fantastic option if you want a top-tier bacon cheeseburger without the smoky salty madness of a sausage inside your bun.

Get Loaded at Higgsy’s

There was something that felt incredibly naughty and sinful about having loaded fries for breakfast, but you know what? I liked it… and I would do it again!

The loaded breakfast fries were essentially a deconstructed burger. Chopped frankfurter sausage, chips, and a huge portion of crispy skin-on fries came slathered in melted nacho cheese, creating an impossibly indulgent, yet unapologetically trashy breakfast experience.
The skin-on chips stayed remarkably crispy under the gooeyness, acting as crunchy pops in the melted mess of flavour. I went for the burger sauce on top, which was the absolute icing on the cake and worked brilliantly with the cheese to pull everything together. If you are on a diet, get the hell out of here!

Higgsy’s has a home!

Higgsy’s opening up a proper restaurant felt entirely inevitable. Back in 2023, I mentioned that I’d love to see them expand into a permanent spot, and after years of slaving away in that small shack just off Yaxley, they have finally done it. Despite the constant council headaches and outright criminal acts against them, the sheer popularity and cult following of Higgsy’s practically demanded that they move on and establish themselves in their rightful place as one of the great burger producers of Cambridgeshire. There was simply no stopping them!

It feels like Higgsy’s has finally found their true home. Anyone who loves them – or wants to seek them out – now knows exactly where to find them.

I highly recommend that any burger fan, whether you are in Cambridge or as far out as Newmarket, hunts them down. The journey will be entirely worth it and you will not regret it. These are still some of the absolute best burgers you will get in the region.
